For lunch we tried Marinara Sauce over "Noodles"

"Noodles"
Prep Time: 5 minutes
Ingredients:
2-3 Zucchini, julienned (great work out for the arms ladies)

Sauce:

Prep Time: 5 minutes
Ingredients:
4-5 Tomatoes
1/4 C Sundried Tomatoes
1 Onion
4 Basil leaves
2 cloves Garlic, minced w/garlic press
1/3 C Olive Oil
1 T crushed black pepper
2 tsp salt (1/2 sea salt, 1/2 iodine salt - you may want more than 2 tsp)
1-2 T hulled Hemp Seed
2 T ground Flax Seed (for thickness)
1/2 T Parsley
1/4 C Lemon juice
Squeeze of Raw Agave Nectar

Option: Add almonds for more creaminess

Directions:
Place all sauce ingredients in the food processor and puree until smooth (2-3 mins). Taste test and add whatever you'd like! Pour over zucchini noodles and eat!

This recipe was great and can be altered in all kinds of ways. I thought of you Melissa when I was eating it, wishing we could be sharing it together and raving over it. :-) I couldn't stop complimenting it the whole time we were eating, but the kids did not like it quite as much. I think it will take a minute for them to get used to eating cold dishes. But that's raw food for you I guess. The onion, garlic and basil really popped in my mouth.

For dinner we're gonna try Lettuce Wraps! And maybe some Raw Chocolate "Ice Cream" balls. Mmmm

Bye for now!
Olivia
