Day 3 for me

Hey Melissa!

Ok, so here's an update. Day 1 progressed into a massive headache. :( I ended up going to bed early, but not until after I googled why it may be that I was experience this pain. Here was the most interesting response I was able to find:

If you are referring to detoxification from going to a cooked food diet, to a raw food diet, I know exactly what you are going through. I went through spells of horrible headaches, fevers, and at worst boils. Let me begin my explaining what is happening to your body during detox. Toxins in your body move to places of lesser density. When your blood becomes filled with toxins from eating toxic foods, the toxins your liver can't filter fast enough is pushed into your lymphatic fluid. This fluid surrounds everyone of the cells in your body. Once we start to detoxify our bodies, the blood becomes tinner because the liver can keep up and do its job. When that happens the blood is flooded with the toxins that have been stored in the lymphatic fluid. The blood becomes thick with toxins causing our blood pressure to rise. The first and most common symptom of detox is a bad headache. The good news is this. The only thing you have to do to stop these pains is eat something cooked. I don't suggest grabbing a bag of Dorritos. Try eating some steamed vegetables. Experiment with foods to see what will help slow the detox, without you putting too much bad stuff in your body. At the same time, you should push yourself somewhat through the detox phase. Once you start to get a headache, and you can still deal with it, just wait and see if it will go away on its own. If it gets too bad, or you are doing something important and it is distracting you too much, slow it down. As far as it being dangerous, that depends on the individual. Have you been on a vegetarian diet? Are you in good health? Do you smoke or drink? All these things determine your toxicity of your body. You may want to also be careful of your detox state while exercising. Exercising naturally causes the body to detox, especially yoga and internal martial arts. Be aware of how your are feeling, and have something ready at hand after your workout if you need it. I used to have bad detox symptoms after my kung fu class. I got bad headaches and would get cravings so bad I would stop after class and eat a bunch of junk. Now I bring steam veggies with me, along with raw fruits. If I don't detox, I eat my raw stuff. If I need cooked, its there. My best advise is pay attention your your body and its needs, and always be prepared.

Very interesting thoughts from that guy!

Ok, so we didn't make the lettuce wraps yet - I have them planned for dinner today though. Mmm But here's what we did make.

It wasn't until I had the dehydrator loaded with 3 racks full of this bread that I realized my already shaken faith in cheap appliances was not crumbling even farther. So after about 5 minutes into the dehydration process, it pooped out. :( I went ahead and put them in the oven on a very low temp. I'd rather have them cooked than thrown out. Plus, it's not like it's bread w/additives or sugar. But come tomorrow in the mail, I'll have a brand new (a bit more expensive) dehydrator, and we'll make some more bread.

The flavor in this "bread" is amazing!!! EVERYONE gave it 5 STARS!!!! Including Anna :-O So this recipe is a keeper!

BREAD

Ingredients

1.5 C ground flax seeds
1.5 C purified water
2 white onions, thinly slice
2 large carrots, grated
1-3 t salt
3 T olive oil
2 cloves garlic
1 T parsley
0.5-1 T black pepper
*really, you can add whatever you want for more flavoring

Directions

Mix together ground flax seeds and water. Let sit for several minutes to gel. Place remaining ingredients into food processor, add flax mix and puree a few pulses.

Spread out on lined dehydrator sheets. Dehydrate about an hour or so. When it's a bit dry to the touch flip and dehydrate a couple hours until dry but not brittle.

4 stars for convenience
5 stars for My Taste
5 stars for Kids' Taste

Is that the recipe from the $10 a day blog? I need to go buy a coffee grinder today for my flax seeds (or buy some ground). I am planning on making that tonight for tomorrow. Are you feeling better now from detox symptoms? I didn't experience anything but maybe because I eased into it slowly.

Keep going you are doing awesome! I promise to post things soon. I mad e a bunch of stuff and never took pictures. I will try and catch up. I have been making a lot of pasta and smoothies lately.
